The issue with DocStar has been resolved and is being monitored. The connection between DocStar and the email account with which it interacts was broken, but after clearing the connection cache and signing back in, it became operational and started pulling in emails.
This was resolved with the help of a representative from Epicor. They did not have a knowledge base article on how to troubleshoot such an issue.

Investigating
IT and the Epicor support vendor are investigating an issue with DocStar where DocStar isn't pulling in new emails from the Payables mailbox. The server is in the process of rebooting. More information will be posted.
